Ebly Feta & Blueberry Salad

A great alternative to rice and a complete low calorie, iron rich nutritive meal in itself. Chewy, salty and sweet…this salad has it all.


Serves: 4


Ingredients

  • 1 cup Ebly (cooked)

  • 1/2 cup tomatoes (chopped)

  • 1/2 cup carrots (thickly grated)

  • 4-5 iceberg salad leaves (thickly chopped)

  • 1/4 cup coriander (finely chopped)

  • 1/2 cup cucumber (finely chopped)

  • 1/2 cup walnuts (chopped)

  • 1/4 cup dried blueberries

  • 6 - 8 pieces Feta cheese cubes

  • 2-3 slices of tomatoes to decorate

  • For the dressing

  • 2 tsp Olive oil

  • 2 tsp Lemon juice

  • 1/2 tsp Salt

  • 1/4 tsp Pepper


Method

  1. Cook Ebly as per instructions on the box.

  2. In a big bowl, mix everything together except the Feta cheese cubes, dried blueberries and tomato slices.

  3. Mix the dressing and add to salad.

  4. Top it off with Feta cheese cubes, dried blueberries and tomato slices.

  5. Give it a good stir and serve.
